Avocado Eggs

Avocado Eggs are something that you could really eat for any meal. If you are into going meatless on Monday’s this would be a fast and easy recipe that is filling and good.

Scrambled eggs lend themselves so nicely to additions. Just by adding different vegetables and meats you can create a substantial meal. Avocado Eggs has green onions, tomatoes, cilantro and avocados. Try this for breakfast or on the night when you just want a really simple dinner! Breakfast Tacos is another egg recipe that you could eat any time of the day.

Avocado Eggs

  • 8 large eggs
  • ¼ cup milk
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 avocado, cut into small cubes
  • 1 cup grape or cherry tomatoes, cut in half
  • 2 green onions, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon olive oil


In a large bowl, beat the eggs together with the milk, salt and pepper. Make sure they are combined well and they are a pale yellow.

Stir in the avocado, tomatoes, green onions and cilantro.

Heat the olive oil in a large skillet over medium low heat. Pour the egg mixture into the skillet. When you see that it is starting to set, take a rubber spatula and gently pull it through the eggs, forming soft curds. Continue doing this until the the eggs are thick and no liquid remains.

Serve at once.
