Chicken Marsala Recipe:
Mushroom Marsala Sauce
Finely chop ½ cup of parsley
Finely chop 3 cloves of garlic
Slice 4 oz of mushrooms
5 tbsp butter (3 for Sauteed Mushrooms and 2 for sauce)
¼ cup of Marsala wine
¼ cup of Whole milk or Heavy Cream
1tsp of flour
Salt and Pepper for Season
Use 3 tbsp of butter to oil the pan, once butter is melted add your mushrooms, garlic and parsley. Season with salt and pepper and Sautee for about 5 mins. Once mushrooms are cooked, remove from the pan and add another 2 tbsp of butter to melt. Gradually add 1 tbsp of flour into the pan constantly whisking. Once evenly whisked, add ¼ cup of Marsala wine, sautéed mushroom mix, and ½ cup of milk or heavy cream. Mix well and simmer till the sauce thickens up.
Trim the chicken breast and fillet in half
Batter mix consists of 1 cup of flour, 1 tbsp of salt, ½ tbsp. of black pepper, ½ tbsp. of garlic powder
In a frying pan, heat the pan to medium heat and oil with Olive oil.
Lightly coat the chicken with a season batter
Cook the chicken breast 4-5 mins with the lid on. Flip and cook for another 4-5 min with the lid on. Make sure to use a thermometer to check the internal temperature of the chicken is 175 degrees. Chicken should be golden brown.
Skin and chop your potatoes into sections. Boil until tender to mash. Once done, mash the potatoes and season with salt, pepper, garlic powder and add 1 tbsp of butter and a little milk to make creamy.
Lay down a layer of the mashed potatoes, place a chicken breast fillet right one top. Coat the chicken and potatoes with the Marsala sauce.
Serve up with your favorite garlic bread.
