Egg salad was one of my favorite lunches growing up. Sadly, the traditional ingredients are not beneficial to ones health and instead may cause inflammation, as well as potentially expose one to harmful chemicals. Traditional relish, for example, may contain food colorings, preservatives, and high fructose corn syrup. Therefore, I decided to create a healthier version that I could continue to enjoy that actually promotes the benefit of eating eggs rather than diminishing them with lackluster ingredients.

The base is simple: boiled eggs, avocado, and dijon mustard. This combo is delicious on its own seasoned with sea salt and pepper, but I enjoy getting creative and adding different spices and other ingredients as well. Here is a traditional recipe as well as a few of my favorite creative egg salad recipes for 2-3 people. I hope you enjoy!

Traditional Egg Salad

Ingredients:
4 pasture raised boiled eggs
1 avocado
2 tablespoon chopped pickles (use high quality brands with no preservatives and food coloring)
2 teaspoon chopped chives
1 tablespoon dijon mustard
Season with sea salt and pepper to taste preference
Optional: Squeeze of fresh lemon juice.

Instructions:
1. Combine eggs, avocado, and dijon mustard, and mash well.
2. Season with sea salt and pepper to taste preference, and mix well.
3. Add in pickles and chives, and mix well. Add fresh lemon juice if desired.
4. Serve in lettuce cups and enjoy.

Curry Egg Salad

Ingredients:
4 pasture raised boiled eggs
1 avocado
2 tablespoon chopped raw red onion
2 tablespoon chopped red bell pepper
1 tablespoon dijon mustard
2 teaspoon chopped cilantro
1 teaspoon curry powder
1/2 teaspoon turmeric powder
Season with sea salt and pepper to taste preference
Optional: Squeeze of fresh lime juice.

Instructions:
1. Combine eggs, avocado, and dijon mustard, and mash well.
2. Add in spices, season with sea salt and pepper to taste preference, and mix well.
3. Add in onions, bell pepper, and cilantro, and mix well. Add fresh lime juice if desired.
4. Serve in lettuce cups and enjoy.

Mexican Spiced Egg Salad

Ingredients:
4 pasture raised boiled eggs
1 avocado
2 tablespoon chopped raw red onion
2 tablespoon chopped tomatoes
1 tablespoon dijon mustard
2 teaspoon chopped cilantro
1 teaspoon cumin powder
1/2 teaspoon chili powder
Season with sea salt and pepper to taste preference
Optional: Squeeze of fresh lime juice.

Instructions:
1. Combine eggs, avocado, and dijon mustard, and mash well.
2. Add in spices, season with sea salt and pepper to taste preference, and mix well.
3. Add in onions, tomatoes, and cilantro, and mix well. Add fresh lime juice if desired.
4. Serve in lettuce cups and enjoy.

Mediterranean Spiced Egg Salad

Ingredients:
4 pasture raised boiled eggs
1 avocado
2 tablespoon chopped raw red onion
2 tablespoon chopped tomatoes (can use sun-dried tomatoes if desired)
2 tablespoon chopped cucumber
2 tablespoon chopped olives
1 tablespoon dijon mustard
2 teaspoon chopped dill
1 teaspoon dried oregano
Season with sea salt and pepper to taste preference
Optional: Squeeze of fresh lemon juice

Instructions:
1. Combine eggs, avocado, and dijon mustard, and mash well.
2. Add in spices, season with sea salt and pepper to taste preference, and mix well.
3. Add in onions, tomatoes, cucumber, olives, and dill, and mix well. Add fresh lemon juice if desired.
4. Serve in lettuce cups and enjoy.
