  1. For American buttercream, if you beat the powdered sugar a half cup at a time, your won’t have the problem of a gritty frosting. Also, mixing it for one minute will not allow for a smooth texture. If you mix it longer, it will not be grainy at all. 🙂

  2. Hello, this video was very instructive and I am looking forward to try the ermine frosting as we have about the same range of temperatures in my country.
    Do you have some tips to help when making the frosting in hot weather? Because of the temperature mines most of the times don't really get thick enough to be piped. P. S.: I don't have AC. Thank you.

  3. American buttercream is the worst and these kids do not know much or whoever made those frostings is not good ….who uses Italian meringue as a frosting ? and what you called Swiss buttercream is actually Italian buttercream….Swiss meringue is made differently.

  4. this is extreamly helpful. im from malaysia its hot n humid all year round. would definately give use this as guide. will stick to cream cheese ermine italian for less sweet oprions.

  5. I have a wonderful white chocolate ganache frosting I make we eat half of before I get it on the cake! I add 2 tbsp caramel apple dip and 3 tbsp butter (even caramel ice cream topping could work but caramel apple dip is thicker) and add it to the heavy cream on the stove. Then I add 1 cup to 1 1/4 cups of mini marshmallows to my chocolate before pouring over the heavy cream. If they haven't all melted when I'm mixing them in I just microwave it for 30 seconds and whisk it really well adding my vanilla paste. It stays fluffy and thick and soft but you can whip it up to get an even lighter frosting after its cooled, but I'm telling you it's so creamy you have to try it!
