Easy & Healthy Chinese Chicken & Broccoli Stir Fry ~ Chinese Wok Recipe
INGREDIENTS
1 large sliced chicken breast
2 cups broccoli florets
1 sliced carrot
oil
water
slurry – equal water and starch

Chicken marinade:
2 tbsp. soy sauce
2 tsp. rice wine
1 large egg white
1 1/2 tbsp. cornstarch

Sauce:
1/2 to 3/4 cup chicken broth
2 tbsp. oyster sauce
2 tsp. dark soy sauce
3 cloves minced garlic
1 -2 tsp. minced ginger
white pepper
drizzle sesame oil

Prepare all ingredients before cooking.

Mix chicken, soy sauce, rice wine, egg white and cornstarch. Cover and refrigerate for 30 minutes.

Mix all ingredients for sauce and whisk well.

Blanch broccoli florets and carrots.
When water comes up to a light boil add chicken and give one or two pushes so not to stick together. Blanch for about 2 minutes and remove.

Clean wok and add sauce. Bring up to a simmer for one minute.
Add chicken, broccoli, carrots and slurry.
Stir until thickened and all chicken and veggies coated.
Remove from heat immediately.

Serving with rice. Enjoy.

  1. I'd sear the chicken with garlic, ginger and scallions in peanut oil,, set aside, add veggies to wok with lid until steam, add chicken and "stir fry" for a moment. In a separate bowl (not to ruin your seasoned carbon steel wok with the sugar) mix in Worcestershire, Sriracha, and a tad of Honey.

  4. Tess, I've been looking for this recipe for the longest, as no one on here discloses what to do with the chicken before you start frying it. Even professional Chinese chefs.
    Many years ago, I ate at one of the most popular Chinese restaurants in Brooklyn, where the owner in confidence disclosed to me that they marinated their chickens, in addition to other things, in egg whites and starch, making them super-tender and tasty.
    No one tells you on YouTube to use egg whites with starch and instead rushes to start frying.
    And you won't believe me, but I just had a skype session with a girl on the other side of the planet, who never ate Chinese before, let alone cooked it, and I chose to use this video to introduce her to Chinese cuisine.
    She got all of the ingredients and after she finished cooking and tasted it, she couldn't stop marveling just how GOOOOOOD it was and now she is now a "chicken broccoli convert".. :-))))
