  2. I'm a new fan of your videos but when it comes to my country"s jerk I have to speak up about your marinade and cooking process. If you're going to use a marinade v dry rub have to use white vinegar. Also use scotch bonnet peppers and don't remove the needs- you need the heat. Don't pick the thyme leaves from the stems. You have most of the correct ingredients though we all add our tweaks. You also made it too smooth better to leave it thicker. Oven temp too high want to bake it at lower temperature for a longer time. No need to glaze it while baking if marinade thicker. You're correct though want chicken to look almost burnt though it's not. The extra marinade you can boil down to make a nice spicy dipping sauce.
