The recipe

This recipe makes moist, tender pork chops with notes of mustard and thyme and just a touch of sweetness. A sprinkle of red pepper flakes gives them just a little zing.

 

The green beans are coated in the same glaze as the pork chops and roasted into veggie goodness. My photos of the green beans do not do them justice. These beans are so good they may outshine the pork chops in this recipe. Trust me, it’s a sad moment when the last one is eaten 

 

Sometimes it takes me several tries to get a recipe to the point that I’m ready to share it with you. Not with this one. I nailed this recipe the first time. Even though I got it right the first time, I made it three more times–once to confirm the recipe and two more because my husband kept buying pork chops and green beans in hopes that I would make it again.

 

He had no trouble convincing me to make it again. Those green beans were calling my name. This recipe is so fast, easy, and delicious that it has quickly become a family favorite.

The Inspiration

This Sheet Pan Pork Chops recipe was inspired by the same article in Southern Living where I got my inspiration for my Lemon Garlic Shrimp Sheet Pan Dinner with Broccolini recipe.

 

After reading their article on sheet pan meals, I’ve found them to be an ideal solution for busy households to make a healthy, home cooked meal. They are fast, easy, and require minimal cleanup.

 

How to bake pork chops

Baking is one of the easiest ways to prepare pork chops. Part of the ease of this recipe is that it requires almost no prep.

 

Just wash and dry the green beans and clip off the ends (if desired). Mix together the wet ingredients in a mixing bowl, then coat the pork chops with the glazet. Put the chops on an oiled pan.

Next, coat the green beans with the glaze and spread them on the sheet next to the pork chops. 

Finally, put the sheet into the oven and bake for about 20 minutes. You will need to turn them half-way through the baking process so they cook evenly.

 

How do I know when the pork chops are done?

Overcooking pork chops makes them dry and tough. Luckily, there are several ways to tell if they are cooked to the right temperature. Two of them can be done without a thermometer.

 

Testing by touch

One way to tell when a pork chop is done is by pushing on it with tongs or a spatula. The resistance you feel gives information about what is going on inside the chop. If it is soft and squishy, it is still rare. If it is hard, it is over-done. You are looking for the pork chop to be firm, but not hard. This method can take a bit of practice.

 

Testing by cutting

A second way to tell if a pork is by cutting into the meat. Transfer a chop to a cutting board and allow to rest for a few minutes. Resting allows the juices to absorb into the meat and the inside temperature to elevate a few degrees. Next, cut into the thickest part of the chop. 

 

If the chop is done, it will be white throughout, but a slight bit of pink is acceptable.

Testing with a meat thermometer

To test with a meat thermometer, insert the thermometer into the thickest part of the pork chop. Be sure it isn’t touching the bone as this will cause the reading to be inaccurate. The internal temperature should be between 145º Fahrenheit and 160º Fahrenheit. At 145º, they are safe to eat, but will be slightly pink in the center.  

 

What to eat with pork chops for dinner

The thing I love about this sheet pan recipe is that it’s truly a whole dinner. You don’t need to make anything else–especially if your family eats low-carb.

  • 1/2 teaspoon dried thyme
  • 1 teaspoon spicy brown mustard
  • 1/2 teaspoon sugar-free maple flavored syrup (may use real maple syrup if you prefer)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes
