1cup quinoa (cooked to packet instructions)

1 cup sugar snap peas

1cup watermelon, cubed

1 cup fresh flat-leaf parsley, roughly chopped

Pinch of salt and pepper


1. Cook Quinoa to packet instructions and leave to the side to cool.

2. Blanch sugar snap peas.

3. Combine Quinoa, sugar snap peas, parsley and watermelon in a large bowl.

4. Add salt and black pepper and toss gently and serve.
