Sweet and Sour Glazed Smelt Fish – Healthy Recipes – For Food Lovers!

Similar to the way we air fried the Salt and Pepper Smelt Fish, this version of the crispy air fried smelt is coated with sweet and sour glaze. It is tasty and full of flavors and will definitely make you want more.

Ingredients for the fish:

  • 1 pound smelt fish (defrosted and drained)
  • 2-3 Tablespoon olive oil
  • 1/3 cup tapioca starch

For the sauce:

  • 1 Tablespoon olive oil
  • 4 Tablespoon black vinegar
  • 2 Tablespoon sugar
  • 2 Tablespoon oyster sauce
  • 2-3 Tablespoon minced garlic
  • 1/2 teaspoon thinly sliced chili pepper
  • Chopped cilantro or Thai basil to serve

Dip the smelt fish in tapioca starch then put them in a parchment paper lined fryer basket without stacking. Brush some olive oil onto the surface of the fish. Air fry at 400F (200C) for about 14-16 minutes, turning the fish over once in between.

In the meantime, in a saucepan, saute the garlic and and chili pepper in olive oil until fragrant. Add black vinegar, sugar, and oyster sauce and stir frequently until the sauce thickens.

When the fish is done, toss it in the sauce to coat. Sprinkle some chopped cilantro or Thai basil to serve.
